Many years ago in my bachelor days, I used to eat a lot of macaroni & cheese. One night I decided that was too bland, so I suddenly invented Tuna Noodle Delight! That’s mac & cheese + green peas (properly cooked!) + good tuna + spices.
Proper cooking of the peas means put frozen peas into boiling pot and wait until it gets back to boiling and then immediately pour the pot into a collander and put the peas back in that pot.
Proper cooking of the macaroni means follow the directions on the package and cook till al dente, then pour the pot into a collander and put the noodles back in that pot.
Then keep cooking at low. Add the butter, milk, cheese and cook for awhile. Slowly increase the heat. Then add the tuna and the peas and keep cooking, adding spices and maybe more butter until it’s done.
Voila.
I’m excited about this, because this is my all-time favorite dish, and I can only have it once a year on my birthday, because it’s not a diabetic-friendly meal. Today was my 62nd birthday, and I got to have that again! Wow! I can hardly believe how much I love such a simple meal.
It’s a miracle I’ve now survived three years since my major surgery on my 59th birthday, which I didn’t expect to survive, and almost did not. It’s great to be alive!
By the way, our friend BFSkinner had a diary a few days ago about favorite foods, and I posted a very short comment mentioning that I really like Tuna Noodle Delight. Somebody said they hoped it wasn’t like Tuna Helper from the 70’s. For the record, no, it’s not like that at all!
Sorry for such a piffle of a diary, but I’m really happy and glowing to have had a big dinner of Tuna Noodle Delight. I’m also happy that the Baltimore Orioles are heroically in the MLB playoffs. I’m also happy I’m still alive so long after that awful surgery. I’m also very happy that Trump is losing so badly.
But mainly this is about noodles.
EDIT—I forgot to mention. The spices are simple. It’s just black pepper, garlic power, Tobasco sause and (if needed) more butter.
